People living in Korea now buy and eat a lot of kimchi. In the past, they made kimchi through "kimjang" (the traditional kimchi-making process), but now, people living in cities buy it more often.

However... sometimes, the store-bought kimchi is too spicy. Not all Koreans enjoy spicy food. So, I used some spicy kimchi that I couldn't eat to make kimchi jeon (kimchi pancake). This kimchi jeon is mild enough for those who don't like spicy food, and it doesn't require many ingredients, so I recommend you try making it.

Necessary Tools:

  • Large bowl
  • Knife and cutting board
  • Frying pan
  • Spatula
  • Sieve

Necessary Ingredients:

  • 200g Kimchi (Spicy kimchi, rinsed before use)
  • 1 cup Flour
  • 1 cup Water
  • 150g Seafood mix (shrimp, squid, etc.)
  • Cooking oil
  • 1/2 Onion (sliced)
  • Soy sauce (for dipping sauce)
  • Chili pepper (For reference only; do not add it as we're making a mild version)

Instructions:

Kimchi in a container, being rinsed to reduce spiciness.

1. Prepare the kimchi (Image 1, 2): Rinse the spicy kimchi in water to reduce the spiciness. Remove as much water as possible.

2. Chop the kimchi (Image 3, 4): Finely chop the rinsed kimchi. Make sure to chop the kimchi small so it cooks evenly in the pancake.

3. Prepare the batter (Image 5): In a large bowl, add 1 cup of flour and 1 cup of water, and mix until smooth. A thinner batter helps the kimchi jeon to cook crispier.

4. Prepare the seafood (Image 6): Chop the prepared seafood mix (shrimp, squid, etc.) into small pieces.

5. Mix the ingredients into the batter (Image 7, 8): Add the chopped kimchi, seafood, and 1 egg to the batter and mix well. You can adjust the spiciness by adding onion and chili pepper according to your preference.

6. Prepare the frying pan (Image 9): Add plenty of cooking oil to the frying pan and preheat it over medium heat.

7. Cook the kimchi jeon (Image 10, 11): Scoop the batter with a ladle and spread it thinly in the frying pan. Cook over medium heat until golden brown on both sides.

8. Finished (Image 12): Serve the finished kimchi jeon on a plate and enjoy with soy sauce. Your delicious seafood kimchi jeon is complete!
